Buttermilk Biscuits / Strawberry Shortcake

    (adapted from a 1973 Betty Crocker recipe)

2 Cups all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon soda

1/3 cup oil (I use Bertolli Extra Light Olive Oil)

2/3 cup buttermilk

Heat oven to 400 degrees.

Measure dry ingredients into bowl

Pour oil and milk into  measuring cup, do not mix

add to flour mixture, stir until mixture cleans

side of bowl and forms a ball. Knead dough

between 2 sheets of wax paper until smooth.

Roll out to 1/2 inch thick between 2 sheets of

wax paper, cut with biscuit cutter and place on

ungreased baking sheet. Bake 10-12 minutes

until golden brown.

Strawberry Shortcake

Use above recipe and make the following changes:

change the baking soda to 1 teaspoon

change the buttermilk to 1 cup

Add 4 to 6 Tablespoons of Sugar

Meausre and mix ingredients as in the biscuit recipe

spread in a 9" square or round pan and bake 15-20 minutes

until golden brown.
