Chicken Pita Pizza

4-6 boneless chicken breasts (I use minimally processed chicken)

You can grill ahead of time or cut into think strips

1 or 2 green, red or yellow Bell Peppers

1 or 2 sweet onions.

1 container of your favorite Barbeque Sauce

Monterey Jack Cheese (1/2 lb cut into thick slices)

1 package of Pita Bread (usually 6 in a package)

Use a large skillet and add about 3 tablespoons of olive oil

Cut the pepper(s) into stips and fry in the olive oil until soft or lighly brown.

Slice the onion(s) and fry until tender or lightly brown.

Add the chicken, season with salt & pepper and fry until lightly brown (add more oil if necessary.

Drain the chicken on paper towels.

Place the pit bread on a baking sheet with the top facing down.

Spread with your favorite BBQ sauce making sure to spread to the edges

Top with the chicken stips, then the pepper and onion.

Cover with the sliced Montery Jack Cheese and broil until the cheese is browned

Serve for lunch or dinner.

You can also get creative with this dish and substitute your favorite salad dressing for the BBQ sauce

experiement with different vegetables and cheese.
