Maple Pecan Chicken


1 lb boneless, skinless chicken breasts cut into 6 pieces

1/2 cup pecan meal or pecan pieces/halves ground into meal

1/4 cup Panko bread crumbs

1 teaspoon pepper

1/2 teaspoon salt


Preheat oven to 350 degrees. Line a baking sheet with parchment

or silicone coated aluminum foil. Mix the pecan meal together with

the bread crumbs, salt and pepper. Put into a shallow bowl. Put

the syrup into another shallow bowl. Dip the chicken into the syrup,

coating both sides completely. Dip the chicken in the pecan mixture,

coating each side completely. Lay the breaded chicken on the

prepared baking sheet. Continue with the rest of the chicken.

Bake for about 20 minutes covered and then about 10 minutes

uncovered to give the coating a chance to crisp to a golden brown.
