Orzo & Watermellow Salad with Feta

(Compliments any warm weather menu)

1 Cup cooked Orzo per package directions; drain and

rinse under cold water. Let cool. Toss cooled orzo with

2 cups of diced seedless watermelon, 1/2 cup crumbled feta cheese,

1 Tbsp olive, sunflower or other vegetable oil, 1/2 cup

sliced fresh basil, 1/8 tsp ground black pepper, and 1 tsp

salt in a medium serving bowl.

Yeilds 6 servings about 3/4 cup each.
